Independence Day happens to be birthday for a friend. We are heading over to his place for a bbq lunch. I started my part the day before - sous vide the pork ribs for 24 hours at 145F. Made the bbq sauce from the liquid that came out of the sous vide bags - ingredients later

Star of the show was young Everett - 14 months old. He loves cuddling the puppy dog - walks up

Steps down for cuddle time

Cuddles. Back to the theme for the day

Pork ribs cooked perfectly - a bit salty but fall off the bone it was

The biggest fan of the ribs was the young man. Chose not to edit the photo. The dog was a spectator - did not get any
We had a fab bbq. We sang happy birthday. We stayed outside on a wind free winter day

I walked home to get the steps done. My wife stayed to chat. Photo theme was easy - sunset colours on the big trees

A different theme - 51 years since I left the army (my regiment symbol) against a background well known for the 26 years I have been in Australia - a gum tree

Found a back way to walk across the golf course not seen before - big tree behind the green in sunset colour

Grand old house facing the golf course captures the evening light

Perfect light for a mushroom staircase

Big tree in the sunlight up our street

This tree in our block has either lost all its leaves in winter or dead. We are hoping it is dead as it is causing a lot of trouble in our drainage systems
Did promise the recipe for bbq sauce.
Put all the liquid from the sous vide bag in a pot. It is salty enough - no salt needed . Bbq sauce needs sour and sweet and flavour. Sour comes from apple cider vinegar and balsamic vinegar. Any vinegar will do but the more flavour the better. Sweet for me comes from maple syrup. The recipes do brown sugar. Any left over bbq or tomato sauce will add some sweet. Now for flavour - Worcestershire sauce, soy sauce (dark and light - we like ketjap manis), something spicy (hot paprika, jalapeno, Sriracha, mustard). The base needs some bulking up - tomato passata, tomato paste, tomato ketchup. Bring it all together- bring to boil and simmer until reduced. Stir occasionally to stop the sauce sticking to the base of the pan.
Taste test - sour vs sweet vs salt vs spicy - adjust accordingly
