| I will be honest with you from the very first spoon: a bowl of this deep green stew is not the prettiest thing you will ever see. It is thick, a little slippery, and if you have never come across it before, it can honestly look a bit strange, maybe even a little scary 🤣. But do not let that fool you, because this humble green bowl is pure comfort. It is made from jute leaves, and I am cooking it here the Middle Eastern way, where the dish is known as mloukhieh. I will admit, it is not something we eat all the time, more of an occasional treat, maybe once every three months or so. My grandmother used to cook it beautifully, though funnily enough my own mother was never that fond of it. So it was always a special, every-now-and-then kind of dish, which somehow makes it feel even more comforting when it finally lands on the table. Today I am inviting you to look past the color and give it a real chance. |

🌱 A few words about Jute Mallow / Sobre el Yute
| English | Español |
|---|---|
| The real star of this dish is a leafy green called jute mallow. It goes by a surprising number of names depending on where you are in the world, including Egyptian spinach and simply jute leaves. What I love is that this little leaf is adored far beyond one region. Across much of Africa it is a genuinely popular everyday vegetable. In Nigeria it is known as ewedu, in Ghana as ayoyo, and in Kenya as murere or mrenda. The plant thrives in warm climates, so it grows happily in many parts of Africa. If you are somewhere like Cape Town, you may even find it growing locally rather than frozen on a shop shelf. And nutritionally? Think of it as spinach's greener, heartier cousin. "Egyptian spinach" is no exaggeration, these leaves are loaded with iron, fiber, and vitamins A, C and K, plus calcium and antioxidants. Good for your blood, your digestion, your bones and your immunity. Comfort food that quietly loves you back. |
¿Y a nivel nutricional? |

🌍 The same leaf, cooked a hundred ways / La misma hoja, mil formas
| English | Español |
|---|---|
| One of the most fascinating things about jute mallow is how differently the world cooks it. The exact same leaf becomes a completely different dish depending on where you are: • In Nigeria, ewedu is boiled and whisked into a smooth, silky soup, served with amala and bean soup. • In Egypt, the leaves are finely minced and simmered with garlic and coriander, served over rice or with bread. • The Middle Eastern way, the one I am making here, keeps the leaves whole in a chicken stew with a garlic-coriander tempering, over vermicelli rice. • In Japan, it is known as moroheiya, eaten blanched with soy and dashi, or fried as tempura. • In the Philippines, it is called saluyot and cooked into everyday soups and stews. • Across South Asia, it is stir-fried or turned into a saag. So the same green goes from a smooth African soup, to a garlicky Egyptian stew, to Japanese tempura, to a simple stir-fried side. |

🛒 Where to find the leaves / Dónde encontrarlo
| English | Español |
|---|---|
| Good news if you are in Spain or elsewhere in Europe: you can usually find these leaves in Arab, Mediterranean, or African grocery stores, especially in bigger cities, and in plenty of online shops that sell Middle Eastern foods. Look for them as molokhia, Egyptian spinach, jute mallow, or Mouloukhié en Branches. They are sold as frozen blocks (whole or chopped leaves) or in dried bags. The plant loves warm weather, so in parts of southern Spain you might even find someone growing it. Two types of leaves: • Frozen (what I use here): convenient and fresh-tasting, straight from the block into the pot, no washing needed. • Dried: more work, you rehydrate, wash well, and squeeze out the water several times to remove the bitterness and extra slime before cooking. |
