Arroz: 2 tazas
Frijoles caupí: 1 taza grande
Aguacate: 2 unidades medianas
Aceite de soja: 3 cucharadas
Sofrito condimentado industrial: 3 cucharadas

A Saturday of Good Flavor: Chicken with Cowpeas, White Rice, and Avocado.
Greetings, friends who love delicious and varied flavors.💁☀️
Happy Saturday to everyone! Today I want to share with you the combination we enjoyed for lunch and that my family loved so much: a delicious chicken and cowpea stew, accompanied by fluffy white rice and a healthy avocado salad. A nutritious meal with a variety of flavors that complement each other perfectly.
I invite you to discover the step-by-step preparation of each recipe. Let’s begin!
✨General ingredients for the meal, serving 3
Chicken: 1 pound (one thigh and drumstick)
Rice: 2 cups
Cowpeas: 1 large cup
Avocados: 2 medium-sized
Soybean oil: 3 tablespoons
Seasoned industrial sofrito: 3 tablespoons
Mixed spices: 8 garlic cloves and cumin
Salt: ½ tablespoon for the rice and ¼ tablespoon for the chicken stew
Dressing for the salad and chicken (garlic, vinegar, cumin, and lemon): 3 tablespoons
Water: enough for washing, preparing, and cooking the ingredients
✨Preparation
Chicken and cowpea stew
The first thing I did was prepare the chicken. I took one thigh and drumstick, washed it well, and cut it into four small portions. Then I seasoned it with one tablespoon of the dressing prepared with garlic, vinegar, cumin, and lemon, and let it rest for approximately 20 minutes.
While the chicken was absorbing the seasoning, I checked one cup of cowpeas to remove any impurities, washed them well, and set them aside.
Once both ingredients were ready, I placed a pot over the heat and added two tablespoons of soybean oil. I added the seasoned chicken pieces and sautéed them for a few minutes. This time I decided to vary my usual procedure: instead of sautéing the chicken directly with the sofrito, I decided to add it after adding the water and cowpeas.
I added one and a half cups of water, enough to cover the ingredients, and added the previously washed cowpeas. Then I added three generous tablespoons of seasoned industrial sofrito, which not only added flavor but also gave the stew a beautiful color.
I also added approximately half a tablespoon of previously crushed cumin and one-quarter tablespoon of salt. It was not necessary to add more salt because the sofrito was already seasoned.
I covered the pressure cooker and let the chicken and cowpeas cook together for approximately 30 minutes.
After this time, the cowpeas had increased in size and absorbed much of the flavors from the chicken and sofrito, while the chicken became tender, well infused with the stew, and had an exquisite texture.
White rice
To prepare the rice, I took the two cups, checked them to remove any impurities, and washed them well.
Then I prepared four garlic cloves: I washed them, removed the skins, and lightly crushed them. In a pot, I added one tablespoon of soybean oil and lightly sautéed the garlic. Then I added the rice and briefly sautéed it together with the garlic.
Next, I added two and a half cups of water. In this case, I used half a cup more than I usually use for my Cuban-style rice because this white rice requires a little more liquid. I added half a tablespoon of salt, stirred, and covered the pot, allowing it to cook for approximately five minutes.
This is a method I usually use, and it gives me very good results. It also allows you to fully enjoy the pleasant flavor of garlic in every bite.
Avocado salad
While the rice was finishing, I prepared the salad. Lately, it has become a regular part of our meals, especially because we are in the middle of avocado season in the area where I live, and I like to take advantage of them while they are available.
I took two avocados, washed them well, and cut them through the center. I removed the seeds and, after cutting them into four sections to make peeling easier, I cut them into small cubes.
Then I dressed them with the two tablespoons of the garlic, vinegar, cumin, and lemon mixture, making sure the dressing covered the pieces well. Finally, I placed the salad in the refrigerator for approximately 25 minutes before serving.
Once all the preparations were ready, I served the meal and enjoyed it with my family while we shared a pleasant family conversation.
I hope you enjoy this proposal as well and feel encouraged to prepare it for one of those family weekend lunches. I’m sure you’ll love it! Hugs!💁🌈
