This huge Scots pine in our village has been producing boletes constantly over the last few weeks.
Just a little stroll, and there are plenty of beautiful boletes to pick, enough to make a really flavourful meal.
Boletes are amazing mushrooms, so meaty and full of flavour.
This particular one, the Weeping Bolete, has a lovely nuttiness and a bit of fruity taste and works really well in sauces or any dish that could do with a bit of extra mushroomy umami.
I decided to dry my latest pick and grind them into a powder to keep for later, ready to add to all sorts of dishes. Today, I used some in this delicious slow-cooked meal…
The pork turned out beautifully tender and full of flavour. The bolete powder definitely added some nice depth. The rich BBQ gravy was delicious poured over the pulled pork and served with creamy mashed potatoes. This is such a comforting meal!
Slow-Cooked Pulled Pork Shoulder With Weeping Bolete Mushroom Powder
Serves: 10 to 14
Cooking time: 10 to 12 hours on LOW
Ingredients (adjust quantities as needed)****
Pork: 3.2 kg pork shoulder
Dry rub
4 tbsp brown sugar
2½ tbsp smoked paprika
3½ tsp salt
4 tsp garlic powder
2 tsp onion powder
2 tsp ground cumin
2 tsp black pepper
2 tsp dried thyme or sprigs of herbs.
1 tbsp mushroom powder ** Slow cooker**
2 large onions, sliced
7 garlic cloves, crushed
250 ml apple juice
2 tbsp Worcestershire sauce
To finish
4 tbsp BBQ sauce, plus extra to serve
To thicken, corn flour mixed with water.
Method
Mix the brown sugar, smoked paprika, salt, garlic powder, onion powder, cumin, black pepper, thyme and mushroom powder.
Pat the pork dry and rub the seasoning all over the meat.
Place the sliced onions and crushed garlic in the bottom. Put the pork on top.
Pour the apple juice and Worcestershire sauce around the pork. No extra vinegar is needed.
Cover and cook on LOW for 10 to 12 hours. Start checking after 10 hours. The pork is ready when it pulls apart easily with a fork.
Remove the pork and rest for 15 to 20 minutes.
Skim excess fat from the cooking liquid, add vegetable like carrots if preferred, and cook and reduce down.
Stir in the BBQ sauce to taste.
Then thicken with cornflour mixed with water.
Pour over the pork.
Serve with mashed potatoes.
