Wow it's been awhile. I have lots of stories to share but just need to find focus.
I've been trying to eat healthy so I looked for recipes. And found this Chicken with chickpeas. At first it was difficult to look for peas as I didn't know we have it in our local store.
Then the spinach, well I did not know what it's called in Filipino/Bisaya so instead I bought pechay. But as I research I found out pechay is a kind of spinach. Huh I learned a lot too while doing this recipe.
Hope you'll try it out too.

INGREDIENTS: 500 grams skinless chicken thigh fillets Salt and pepper 1 tablespoon vegetable oil 2 cloves garlic, chopped 1 medium white onion, chopped 1 (420-gram) can chickpeas, drained and rinsed 1/3 cup fresh calamansi juice 1 packed cup fresh spinach leaves cayenne pepper
PROCESS:
•Drain the chickpeas

•Season chicken with salt and pepper.

•Heat oil in a large pan over medium heat. Saute garlic and onions until fragrant. Add chicken and cook for 4 minutes. Flip to cook the other side.


•Add chickpeas and calamansi juice. Cover pan and cook for 5 more minutes.



•Add spinach and cook until wilted. Adjust seasoning. •Sprinkle with cayenne pepper.

And here's the final product. For me it was not perfect still needs improvement but for a first time it's okay.
