It never even crossed my mind that noodles could be prepared this way. This combination often pops up on my social media feeds. It’s a simple yet incredibly delicious way to enjoy noodles. This style of noodles is known as “Thai-style noodles.” The noodles are simply boiled, then tossed with a special Thai-style seasoning and drizzled with hot oil.
What’s unique about this dish is that it doesn’t use celery leaves—which are usually the go-to choice in Indonesian noodle dishes. Instead, celery leaves are replaced with cilantro. I really love having cilantro leaves in my garden, so I immediately harvested four leaves and washed them thoroughly because they were covered in dust.
As we know, cilantro has a very different flavor from celery; I usually use celery leaves in curries or other soups. However, according to people who have made it, they say it’s actually the cilantro leaves that give this Thai-style fried noodle dish its distinctive flavor.
If you’re curious about the preparation steps, let’s take a look at the step-by-step guide to preparing the ingredients and making this dish.
Ingredients
1 package of instant noodles 4 sprigs of cilantro 4 bird’s eye chilies 1 clove of red onion 2 cloves of garlic 1 teaspoon of lime juice 1 tablespoon of fish sauce 1 tablespoon of sweet soy sauce 1 tablespoon of chili sauce 1 teaspoon of oyster sauce 2 tablespoons of palm sugar
Cooking Instructions
Place the chili peppers and cilantro leaves on a plate and chop them into small pieces to your liking.
Next, mix all the seasonings—soy sauce, sugar, and others—into the chili and cilantro mixture, then add the lime juice.
Stir in the finely chopped shallots and garlic, and pour hot oil over the mixture.
Next, boil the noodles until cooked, then toss them in the prepared seasoning mixture.
Result
Ta-da! Look, the noodles are ready to enjoy right away. You can serve them with a fried egg or ground meat—whatever suits your taste. Since I wanted to try them without any other added ingredients, I enjoyed them just as they were.
The noodles are really delicious—sweet, savory, and spicy—and you can definitely taste the fried noodles even without mixing in any instant noodle seasoning; the flavor is already very savory on its own. And yes, the cumin is very noticeable here—not too overpowering, but with a strong enough aroma. I like this combination, but I suggest not adding too much oil so the flavor comes through better.
