My friends here wanted to eat biko, a sweetened glutinous rice with coconut oil on the process. I'm expert in cooking this since I was watching my grandfather cooking this kind of Filipino native delicacy either birthday or during all souls day. It is also being prepared during fiesta celebration.
Of course, I was the one who tasted it first while still fresh from cooking. But I love eating it when it cool down in fridge with pure unsweetened black coffee.
Here in Saudi Arabia, they have no celebration like this. When a person already dead, it would be bury in the cemetery without any visit until the end of time. Filipinos are different and even offer food to the dead person. There are numbers of of Filipina around so I cooked biko. They gave me money to covered the expenses or they refunded how much I spent. I Labor and gas was free and out of charge. hahaha.
They said that my biko is different from what they tasted at home. I emprovised the method of cooking by adding the peanut and jackfruit meat in the ingredients.
This is the coconut milk turned into oil added with brown sugar.
Look at the biko version of me! So yummy whom repeatedly ordered everytime they have party. I don't know why they can't reach the timing of cooking this biko. From me, its perfect and well cooked. I There's no granules of hard rice on it. This last time I cooked it I saw and tasted it perfectly done. Ebemy boss eat it. I She is always longing to eat.
To balance the taste, but put lemon juice and pint of salt to the sauce mixture before adding the cooked rice. Well, I separated cooking the rice while making the sauce. So the rice. must be well cooked before mixing the liquid with peanut. After mixing the ingredients, I added the sliced jackfruit. Bring to the fire for a while, close the fire and done!
Let's eat my friends!
