Getting Creative with Root Veg: Beetroot & Swede Rosti

I'm a massive fan of seasonal cooking, starting with the produce you have rather than a recipe that requires you to go to the supermarket. With an abudance of beetroot and swede, I had to go past the usual pickled beetroot (I have too many jars!) and roast swede (yum) and decided to make rosti.

Someone asked me the recipe, but I used my intuition - google any 'rosti' or 'kartoffelpuffer' recipe online and use the same proportions as you would potato, except this time sub for grated swede and beetroot. I did have a spare small potato I also used up. Whilst potatoes have more juice, I still tried to squeeze any of out the grated bowl I made. I had about four beetroots to five swedes and a potato, which made me plenty for lunch and dinner as well.

I also had an onion from the garden, and used the tops as well (what a waste to throw them out!) and seasoned with salt and pepper.

I do wish I was better at photos, but this is Hive, right? We should be about real, lived experiences, and less 'perfect' and 'Ai'. What is with Ai food 'photography'? How can we drool over food that doesn't exist?

For extra pizazz, I fried grated halloumi and parmesan with capers, though I think it might have been more interesting to have them inside the rosti itself. STill, it was a fun experiment and delicious. I wished I had an onion chutney, and didn't have anything to have with it at all so I made a yoghurt sauce with mint and parsley which was nice enough.

The true success of a recipe is would you make them again? In this case absolutely I would! Definitely a keeper.

Have you experimented with different rosti before? What's your favourite beetroot recipe?

With Love,

Oh my! Now you've gone and done it. I have spicy red cabbage in the pantry that needs eating. Extra onions and potatoes. So guess what I'm making for dinner tonight? Plus, I may just make schnitzel too since I will be frying. lol It looks delightful.

While I'm reading I'm imagining that food with parmesan cheese which is one of my favorites. I love cheese. Every recipe mixed with it is absolutely delicious for me. Eating healthy makes us live longer. I like that you made some healthy ingredients which is abundant in your place.

using onion greens instead of throwing them away is such a good habit. that mint and yoghurt sauce sounds like it cut through the richness of the fried cheese and rosti really well too. 🌹🦋

It’s really nice to cook using ingredients that we can find in our own garden. That’s also where our creativity comes in because not all the ingredients in a recipe are available. We have to find alternatives and make the most of what we have. It’s fun to experiment and discover new ways to prepare our food.

Honestly, I’ve never tried eating beetroot because it’s not that common in our area. Whenever I see posts about it, I get curious about its taste. I always wonder, “Does it taste good? Will I like it?” Hehe. Maybe one day, I’ll get the chance to try it and find out for myself!

Can't say I have ever tried rosti before. Just regular hash browns. As far as beetroot recipe, not sure. Would have to ask the wife what all she uses beetroot in. Don't do the cooking here. In fact I am rarely allowed in the kitchen once the act of cooking begins. Sometimes I am asked to open a container or something, but that is the extent.

Your dish looks and sounds amazing. Would love to have a bite or two of it. Sit on your deck and have a beer to chase it down.
