¡Hola, amigos!

Hi, friends! It’s a pleasure to reach out to you today to share a surprise gift I made for my godson Benjamin, who was turning 9.
Since he’s a huge soccer fan, I wanted to make him a cold cake because I knew he’d love it, and I also wanted to personalize it with his name and a photo of him. For this cake, I baked a traditional sponge cake that I moistened with chocolate milk, prepared a pastry cream filling, and decorated it with meringue. For the topper, I used some images to recreate a soccer field and make him the star of the show. I was really pleased with the result.
I’d never decorated a cake with such colorful details on the bottom before, but this one—which I made with 240 grams of wheat flour, approximately 240 grams of sugar, and eight eggs—had a unique twist: just as I was about to decorate it, the power went out. Since the birthday was approaching and the announced power rationing was for about six hours (which meant the power wouldn’t come back on until after midnight), and I had also baked the cake that very same day, I was really pressed for time.

Just a few minutes before the scheduled time to sing “Happy Birthday,” I found myself doing something I never thought I’d be able to do: whip up a merengue using just a whisk and my arm! At first, I had a piping tip ready to create a grass-like effect—which I was actually going to use for the first time—but the meringue wasn’t thick enough to form that design, so it ended up with these peaks, which wasn’t what I’d planned at first.
Luckily, I had the help of my sister-in-law, who gave me a hand with the whisking, because I never would have managed it on my own. The truth is, when the moment came and they called me to sing “Happy Birthday,” my godson came to get me. I blindfolded him, showed him the cake, and his joyful reaction was my greatest reward. We went up slowly because he lives on the fourth floor and I’m not one for climbing stairs.
To my even greater surprise, when his mom saw me arrive with the cake, she was overjoyed. Seeing her son’s picture on it, she was moved to tears, hugged me warmly, and told me she hadn’t expected me to make another cake for him, since they’d already ordered one that had been delivered earlier that day.

In the end, my godson handed out the cake his mom had bought for the birthday celebration, and from the one I gave him, he only cut off a small piece for me to try; he put the rest in the fridge to enjoy the next day. He told me he really liked it, especially the pastry cream filling, because it tasted like quesillo to him.
This is one of those cakes where you have a certain vision in mind, but it doesn’t turn out exactly as expected—yet in the end, we’re quite pleased with the result because it achieved its goals: first, to surprise him with an extra gift, and second, because one of the things he liked most was that it was a cold cake.
Although the grass didn’t turn out exactly as I’d hoped, it looked good: I managed to recreate the soccer field I had in mind, and it became his favorite cake. To moisten the sponge cake, I used a chocolate drink, but I feel that if I’d used pure cocoa powder, the flavor would have been more intense, so I’ll keep that in mind for my next batches.

As an amateur baker, I find myself having to figure things out more and more on my own, but I hope to take a specialized course in this field soon so I can create those fabulous designs I’ve been dreaming of. One of the things I want to learn is how to use a piping tip and a pastry bag; it really looks easy, but for those of us who have to decorate this way, it’s not simple at all. You need an incredibly steady hand, precision, and coordination. I really admire pastry chefs for their ability to make every detail perfect without overdoing the cake!
I love the world of baking; it’s something I enjoy immensely and want to keep perfecting, since I’m ultimately in charge of making my family’s birthday cakes. It makes me very happy to do it, as long as I have someone nearby to help me out—especially with the cleanup, because afterward everything is a total mess! So, since I don’t charge my close family members for making their cakes, the least I ask is that they help me wash everything that gets dirty during the preparations.
I’ll be making another cake soon, but this time I’ll be using whipped cream for the first time. It’ll be a challenge because I’ve never used it before, and I have high hopes; I don’t know the perfect consistency yet, but as always, it’ll be a matter of trial and error, gradually perfecting my skills in this art where I know there’s still so much to learn.

So, if you want to make a cake like this, the recipe is very simple: a traditional sponge cake with eight eggs, filled with pastry cream, moistened with a chocolate drink, and decorated with meringue. I used green food coloring for the soccer field details, strategically placed images printed on photo paper to achieve the look I described, and assembled everything on a gold base to make it look more aesthetically pleasing.
That’s all for now. Soon I’ll share a new recipe and the story of how I made my other cake!
