Hello, Hive fam! 🤗💖👋 I hope everyone is having a wonderful day. Today, I’m sharing a simple but delicious and crispy Filipino-style eggplant lunch dish I made at home😊. The ingredients I used are eggplants, one egg, crispy fry and breadcrumbs.

To prepare the eggplant, I sliced it into diagonal shapes, not too thin and not too thick. It’s just like slicing potatoes for fries. Honestly, I used to dislike the slimy texture of the eggplant when it was cooked in a law-uy dish as a kid, but now? I love it, especially when it’s crispy.

After slicing, we coated it using crispy fry for that seasoned taste. Coat it like you’re powdering your face. But if you prefer a milder taste, you don’t have to use this breading mix for it.

Don’t forget to dip it in the egg, so the bread crumbs can stick to the eggplant to make it extra crispy when fried.

For the last step, we fry it in oil or, if you have an air fryer, you can use it too. Fry it till golden brown. And here’s the dish! It’s crispy, delicious. And it tastes better with Del Monte’s tomato sauce🍾 for that sweet-and-tangy flavor to balance it.

And since I wanted something spicy to make the food more delicious and appetizing, I added some Palapa. Palapa is a spicy and savory spiced condiment from my Maranao tribe made with ingredients like scallions, ginger, and chili. I added it alongside my crispy eggplant to give the dish an extra kick🌶️.

To complete my lunch, we made a mango shake to fight off the heat and spice🥭. It's so satisfying to sip it after feeling the spice.

From cooking this dish, it reminds me how I love Filipino cooking. That we Filipinos have a wonderful way of making the most out of what we have, proving that delicious food doesn't always need to be expensive or complicated. Sometimes, a simple ingredient and a little of whatever available ingredients we have at home are more than enough to make a delicious lunch😇💗.
