Invito a participar a mis queridas @annafenix y @mercmarg en el The Brand New PLANT BASED challenge: A Birthday Cake!
Pastel de limón con crema de coco
Ingredients:
2 lemons 150 milliliters of oat milk 30 grams of dry yeast 15 milliliters of apple cider vinegar 7 milliliters of vanilla extract 7 grams of baking powder 100 milliliters of corn oil 90 grams of vegetable margarine 60 grams of ground flaxseed 3 cups of whole wheat flour 100 grams of shredded coconut 30 grams of cornstarch
Ingredientes:
2 limones 150 mililitros de leche de avena 30 gramos de levadura seca
15 mililitros de vinagre de manzana 7 mililitros de esencia de vainilla
7 gramos de polvo de hornear 100 mililitros de aceite de maíz 90 gramos de margarina vegetal
60 gramos de linaza molida 3 tazas de harina de trigo integral 100 gramos de pulpa de coco
30 gramos de fécula de maíz
Preparation:
We start by soaking the flaxseed to make our flax eggs. Place one part flaxseed and twice as much water in a bowl—that is, 2 tablespoons of ground flaxseed and 4 tablespoons of water.
Let it sit for 4 minutes so the flaxseeds can absorb the water. During this time, the flaxseeds absorb all the water, forming a very thick mixture.
While the flax eggs are soaking, let's sift the flour. Take a sieve and sift the 3 cups of flour. Place it in a large bowl. Add the sugar and stir with a teaspoon.
Let's gradually add the other dry ingredients: the yeast and the baking powder. To begin incorporating the liquid ingredients, add the flax eggs, oat milk (we make the oat milk by blending the oats in a blender with 30 milliliters of mineral water; in this case, there’s no need to strain it through a sieve, since the pulp will add body to our cake), vegetable margarine, vanilla, apple cider vinegar, and the juice of one lemon.
Since lemon is our star ingredient, we're going to add some lemon zest to bring out the cake's flavor.
Let the ingredients rest for 5 minutes, then start mixing with a large teaspoon.
Mix using folding motions to incorporate air into the mixture, and as soon as all the ingredients are fully incorporated, it will be ready.
We'll grease the pan with vegetable margarine; in this case, I used a round, heat-resistant ceramic pan. Then we'll dust it with flour to prevent the cake from sticking.
Let's pour the mixture into the pan starting from the center, so that it spreads out on its own toward the sides. Let's use half of the mixture.
Preheat the electric oven to 180 degrees Celsius for 10 minutes, then bake the pan with the batter at 200 degrees Celsius for 15 minutes.
We'll repeat this process twice to make two cakes.
Haremos 2 veces este procedimiento para tener 2 pasteles.
For the topping, we'll use coconut milk. Take the flesh of one coconut, cut it into pieces, and blend it in a blender with 50 milliliters of mineral water until smooth.
Let it sit so the fat separates from the milk. Pour the milk into a bowl, and we'll process the fat to make our coconut cream.
Take 30 milliliters of coconut milk and mix it with 1 tablespoon of cornstarch.
Heat the coconut oil over low heat and add the cornstarch while stirring. When it begins to thicken, stir in 30 grams of sugar, a few drops of lemon juice, and 5 milliliters of vanilla extract.
We'll use this mixture. Mix it well with a mixer until it thickens. This frosting isn't as stable as other frostings, so we need to work quickly when spreading it on the cake so we can refrigerate it.
I made a small cake using the 1-cup silicone mold. I stacked them one on top of the other.
Once we have the frosting, we'll spread it over the cake and use a fork to create grooves. This not only adds texture to the frosting but also helps it stay in place on the cake.
To garnish, I placed some lemon slices and lemon zest on top of the cream.
I also made some caramel strands by heating 15 grams of sugar and 7 milliliters of water over low heat until it turned into caramel. I removed it from the heat and used a spatula to form these strands.
Chill for 15 minutes before serving. Now we can enjoy this delicious cake.
