Pizza is one of the most well-known and beloved Italian dishes in the world, and when I visit a new city, I always love trying the local way of making it. In fact, you should know that every region makes pizza differently: thin, thick, with a soft crust, without a crust, fried, stuffed, and even the ingredients can vary.
This time I'm in Perugia, in the Umbria region. The influence of nearby Rome is very strong here, both in terms of trade and culture. For this reason, it's not uncommon to find "Roman-style" pizza.

La pizza è uno dei piatti italiani più conosciuti e amati al mondo e quando visito una nuova città mi piace sempre provare il modo in cui viene cucinata lì. Infatti, dovete sapere che ogni regione fa la pizza in maniera diversa: sottile, alta, col cornicione morbido, senza cornicione, fritta, ripiena, … e anche gli ingredienti possono cambiare.
Questa volta sono a Perugia, nella regione Umbria. In questo luogo l’influenza della vicina Roma è molto importante, sia per gli scambi commerciali che per quanto riguarda la cultura. Per questo motivo, non è raro trovare la pizza “alla romana”.



I tried Roman-style pizza at a very nice pizzeria called "Pizzeria Pietrino," a must-try for lovers of Roman-style pizza in Perugia. On their website, they describe it as "la mejo pizza romana" (the best Roman pizza), so my expectations were high.
You can eat it whole or by the slice, dine in or take out. I had the vegetarian pizza with walnuts and Gorgonzola, and my husband had the one with prosciutto, shaved Grana Padano, and onion.
Ho assaggiato la pizza alla romana in una pizzeria molto bella che si chiama “Pizzeria Pietrino”, il punto di riferimento per gli amanti della pizza romana a Perugia. Sul loro sito scrivono “la mejo pizza romana” (la migliore pizza romana), quindi le aspettative erano alte.
Si può mangiare sia intera che al taglio, sul posto oppure da asporto. Io ho preso la pizza vegetariana con noci e gorgonzola e mio marito quella con prosciutto, scaglie di grana padano e cipolla.



The secret of Roman pizza is its light and highly digestible dough. How is it made?
They use a mix of flours, often 00 flour combined with rice, soy, or spelt flour, with a very high hydration (up to 70-80%).
The dough is left to rise for a long time, resting for 24-72 hours, making the final product extremely digestible.
Unlike Neapolitan pizza, which is thick in the center, Roman pizza is rolled out very thin and evenly all the way to the edges.
The cooking process ensures that it is crispy on the outside but soft on the inside, without the high, puffy crust typical of Neapolitan pizza.
La caratteristica della pizza romana è il suo impasto leggero e molto digeribile. Come si ottiene?
Si utilizza un mix di farine, spesso la farina 00 unita a farina di riso, soia o farro, con un’idratazione molto alta (fino al 70-80%).
La lievitazione è lunga, l’impasto riposa per 24-72 ore, rendendo il prodotto finale estremamente digeribile.
A differenza della pizza napoletana, che rimane spessa al centro, la pizza romana viene stesa molto sottile e uniforme fino ai bordi.
La cottura prevede che diventi croccante fuori ma soffice dentro, senza bordo alto e gonfio tipico della pizza napoletana.
