Reviviendo mi masa madre + Yudane

Durante un largo periodo de tiempo no di de comer a mi masa madre, principalmente porque quería alimentarla cuando estuviera dispuesta a hacer pan, pero como no iba a comer pan durante veintiún días, postergué su alimentación.

Pasado poco menos de un mes desde la última vez que la alimenté, revisé la masa madre que tenía en la nevera y la verdad que pensé que estaba muerta, pues su olor era muy fuerte. Estuve a punto de desecharla, pero alguien me recomendó alimentarla y ver cómo se comportaba; me aconsejó intentarlo y tomé el consejo, pues, como dicen por ahí: "El que no escucha consejo no llega a viejo".

Y qué bien que seguí el consejo porque la alimenté y pude usarla sin problema alguno. Lo primero que hice fue retirar la masa madre del envase donde la tenía guardada en la nevera.

Entonces, en el mismo envase previamente enjuagado con agua, coloqué una parte de esa masa madre iniciadora, dos partes de harina de trigo integral y una parte y un poco más de agua. En cuanto al agua, no puedo dar una cantidad exacta porque siempre coloco una parte y posteriormente voy agregando más de a poquito y mezclo muy bien, ya sea con una paleta o con un palillo chino, hasta lograr una consistencia un tanto espesa.

For a long time, I didn’t feed my sourdough starter, mainly because I wanted to feed it when I was ready to bake bread, but since I wasn’t going to eat bread for twenty-one days, I put off feeding the starter.

A little less than a month after I last fed it, I checked the sourdough starter I had in the fridge, and to be honest, I thought it was dead because it smelled so strong. I was about to throw it away, but someone recommended that I feed it and see how it behaved; they advised me to give it a try, and I took their advice, because, as they say, “He who doesn’t listen to advice doesn’t live to a ripe old age.”

And I’m so glad I followed that advice, because I fed it and was able to use it without any problems. The first thing I did was take the sourdough starter out of the container where I’d been storing it in the fridge.

Then, in the same container—which I’d rinsed with water beforehand—I added one part of that starter, two parts whole wheat flour, and one part plus a little extra water. As for the water, I can’t give an exact amount because I always start with one part and then gradually add more, mixing very well—either with a spatula or a chopstick—until I achieve a somewhat thick consistency.

Mi idea principal no era usar yudane, sino tangzhong, pero luego de investigar sobre ambas preparaciones, opté por hacer el yudane, cuyo paso a paso consideré que era más sencillo. Ambas son premezclas que permiten que el pan retenga más la humedad, entre otras bondades.

When this dough doubled in volume, I repeated the previous process and waited for it to double in volume and then a little more; at that point, it was ready to make bread.

I used this sourdough starter to make enriched bread, and I also used yudane for the first time.

My original plan wasn’t to use yudane, but rather tangzhong; however, after researching both methods, I decided to make yudane because I found its step-by-step process to be simpler. Both are pre-mixes that help the bread retain more moisture, among other benefits.

Para preparar el yudane utilicé 50 gramos de harina de trigo y 50 gramos de agua hirviendo; la proporción es de 1:1.

To make the yudane, I used 50 grams of wheat flour and 50 grams of boiling water; the ratio is 1:1.

Estos dos ingredientes se mezclan hasta formar una masa. Se cubre con un papel film y se lleva a la nevera; recomiendan un mínimo de cuatro horas de reposo. Yo dejé el yudane en la nevera toda la noche y lo dejé temperar para usarlo.

These two ingredients are mixed together to form a dough. Cover it with plastic wrap and place it in the refrigerator; it’s recommended to let it rest for at least four hours. I left the yudane in the refrigerator overnight and let it come to room temperature before using it.

    Muy interesante. Seguiré el proceso para tenerlo en cuenta cuando vuelva a hacer pan. También estoy en abstinencia de pan y harina. No sabía que se llama Yudane, pero poniéndole sal es la masa perfecta para hacer churros. Harina y frita, de momento descartado del menú. Por cierto, el yogur en mi casa lo preparaban con un litro de leche en la licuadora y un vaso de yogur Yoka natural sin azúcar, muy bien mezclado y puesto en vasos de vidrio o plástico en lugar abrigado durante toda la noche y en la mañana a la nevera. Sin peso ni termómetro, eso sí, para que quedara más firme, la leche se preparaba con alguna cucharada más de leche en polvo.
