My version of cauliflower mash

Hello, fellow food lovers! It’s a pleasure to greet you. It’s been a long time since I’ve experimented with anything in the kitchen—to be honest, I just haven’t felt up to it, as I’ve mentioned in previous posts. But recently, I came across a recipe and thought, "I have the main ingredient; I’ll give it a try!" As you can see in the image, I’m talking about a purée—but one made with a unique ingredient: cauliflower.

To be honest, I had never made or even tried cauliflower this way before, but since it requires so few ingredients, it was worth a shot. The recipe I saw called for almond flour—which I obviously didn't have—and I considered using oat flour, but I wondered how that would turn out. In the end, I decided against it and just made it as is.

Ingredients:

  • 1/2 head of cauliflower
  • 2 tablespoons butter
  • Seasonings to taste (salt, pepper, nutmeg)
  • Water

Instructions:

The first step is to cut up the cauliflower, separate the florets, and soak them in water with vinegar for about 10 minutes.

Then we put it on the stove with a little water and let it cook for about 15 minutes, or until the cauliflower is tender; I added a bit of salt, pepper, and a touch of nutmeg.

Once it's ready, take it out of the pot and mash it; while doing so, add a little butter—I added two pats, but felt it was too much (not enough cauliflower, haha), but anyway, the goal is to get a creamy consistency.

Just like in the photo—no need for a lot of extra ingredients; we simply blend it, and that’s it! You end up with a delicious purée. It’s definitely a different way to enjoy cauliflower—have you tried it? 🤪

I hope you’ll give it a try—a new recipe on the menu for our health.
