Homemade stir-fried water spinach with red curry paste and oyster sauce, using fresh ingredients from the home garden.

Hello everyone. How are you today? I hope all is well with you and your family. Today my wife and I are still living a simple life as usual. Of course, our food is simple, too. My wife prepares a simple meal using a small amount of fresh garden produce, supplemented by other vegetables purchased from the mobile grocery vendor. This dish is stir-fried water spinach with red curry paste and oyster sauce. She has always cooked stir-fried water spinach with oyster sauce, but this is the first time she's making it with red curry paste. For these fresh garden ingredients, my wife picked water spinach and galangal. Additionally, dried chilies, which were picked before the beach trip and dehydrated, are also being used as ingredients this time.

The water spinach this time was picked from three 12-inch plastic pots. There are 3 plastic pots of 12-inch water spinach left, plus some more planted in the ground, for our other meal.

She dug up a little bit of galangal from the home garden for this dish.

This is the chili pepper plant from our home garden that my wife harvested and dried before our beach trip.

Ingredients for stir-fried water spinach with red curry paste and oyster sauce this time.

How to cook stir-fried water spinach with red curry paste and oyster sauce : Crush the galangal, garlic, dried chilies and shrimp paste using a pestle and mortar to make red curry paste.

Put a pan on the stove and heat a little oil, then add the red curry paste to the pan, stir-fry until it is aromatic and cooked.

Then, add the water spinach in the pan and stir-fry it with the red curry paste to coat. Add a little water in the pan and keep stir-frying until the water spinach wilts and softens. Season with oyster sauce, stir for a few seconds and remove from the heat.

It’s finished, stir-fried water spinach with red curry paste and oyster sauce.

I thought that you would put something like a little meat in the fried water spinach, oh well, this is a healthy living way around your family where you can get the veggies in your garden and not buying anymore in the market..

So, you've used the oyster sauce for adding some moist and taste? Well, don't be surprise because I also use oyster sauce when cooking something with meat and I tell you that the viand that I cook really looks good, delicious, and tasty.

Using red curry paste instead of plain oyster sauce sounds like such a great twist for water spinach. I bet pounding the galangal and dried chilies in the mortar made the whole kitchen smell amazing.
