Hello, dear friends at Creative Cuisine!
I’ve just joined this community of creative cooks. I’m writing to you from my little kitchen in a corner of the Apure plains in Venezuela. I’m Karlita, a teacher at a Center for Information Technology and Telematics, and one of the things I’m most passionate about in life is cooking.
Ever since I was a child, I’ve been drawn to cooking, and I took my first steps in the kitchen by helping an aunt on my father’s side who lived with us and had a mobility impairment. She always encouraged me to learn new things; I often think she would have been a very successful woman if she’d had more opportunities. Once, I even thought about opening a little cooking school for children and naming it “Esperanza,” after her middle name.
For me, cooking is a way to show love to my family. Plus, my partner also loves to cook, so it’s an activity we really enjoy doing together, especially on weekends when we have time to be at home.
This weekend, we got to work preparing some pork chops we bought at the market. Here are the ingredients and instructions:
Ingredients: • 1 kg of pork chops • Fresh oregano to taste (we have a little plant in the backyard) • 4 cloves of garlic • Oil (a dash) • BBQ sauce • Salt to taste
Preparation:
1. Season: Place the pork chops on a cutting board and season both sides with salt.
2. Sear: In a very hot skillet, add just enough oil to coat the bottom and prevent sticking (keeping in mind that the pork releases its own fat during cooking). Place the chops in the pan along with the oregano leaves and let them sear until golden brown on both sides.
3. Add flavor: Add the previously crushed garlic cloves.
4. Cook: Add a little water, cover, and let cook over medium heat. Be careful not to overcook them. When the chops are tender and the water has reduced, they’ll start to sizzle; this indicates they’re browning in their own fat and will become even more golden.
5. Finishing Touch: Adjust the salt if necessary and add the BBQ sauce. Toss the chops so they’re all well coated with the sauce, turn off the heat, and cover for a couple of minutes.
Side Dishes:
Additionally, we parboil cassava and prepare a salad of lettuce, tomato, and onion, dressed with apple cider vinegar, salt, olive oil, and finely chopped Spanish cilantro.
It was a meal we thoroughly enjoyed as a family. If you decide to make it, I know you’ll love it. Surely, as the creative cooks that you are, you’ll add other flavors you have on hand in your kitchens.
Thank you all so much for taking the time to read this and welcome me to the community. I’d love to hear your ideas, tips, or suggestions so I can keep learning and improving in the kitchen, so any recommendations or variations on this recipe are more than welcome in the comments! Hugs and enjoy your meal! With love and flavor from the plains: Karlita (@lanenadecorazon1)
