Hello! I would love to try it. Eggplant has a meaty texture that, when coated in flour and breadcrumbs, must come out crispy on the outside and tender on the inside: that contrast is exactly what I look for in a bite. I find it fascinating how such a simple ingredient transforms with a golden, crispy layer, and how interesting it would be to taste it, to perceive how the breadcrumbs trap the eggplant's juices while the exterior stays firm and flavorful. Plus, the recipe is very instructive because it teaches basic techniques: double breading, oil control, the right amount of salt, that are useful for many other dishes, which makes it doubly valuable. I would definitely try it with great pleasure.

Yown! Your crispy eggplant looks very delicious and crunchy, Sissy. I love eggplant dishes, and I sometimes cook fried eggplant at home when I want a simple meal. Your recipe is easy to follow, and the breadcrumbs probably made it extra crispy. I also use soy sauce (syempre with calamansi) as a dip because it adds more flavor to the eggplant. Nakakagutom looking at the golden-brown color of your finished dish. I like that the ingredients are simple and affordable, making it perfect for everyday meals. Salamat for sharing your cooking process and recipe with us. I am sure this crispy eggplant would taste great with rice and a cold drink (syempre Coke gusto ko 🀣). Keep enjoying your kitchen journey and sharing more yummy recipes with us, Sissy!
