Hello friends at @hivefood, I hope you are doing very well. Today I want to share with you how we can add a little more fiber to our daily arepas, because the truth is that even though I love them, I can't eat them very often if they are made only of corn flour. Also, since I've been cutting back on flours, this recipe is great, so here I share it with you:

INGREDIENTES / INGREDIENTS: ✅ 2 Calabacines / 2 Zucchinis ✅ 1 Taza de harina pan / 1 Cup of pre-cooked corn flour ✅ 1 Plátano pintón / 1 Semi-ripe plantain ✅ 4 Cucharadas de chía / 4 Tablespoons of chia seeds

Okay, let's start by peeling and grating the zucchinis, and here I recommend doing it on the finest side of the grater.

Once we grate it, we are going to drain it to remove the excess water. While we were grating the zucchini, I set the chia seeds to hydrate in water.

After I had drained the zucchini, I added the chia, the flour, and a touch of salt, and kneaded it very well. Then, I put it into the burger patty mold and took it to the skillet. We grill them on each side for about 10 minutes and that's it. As for the rest of the arepas, I put them in the freezer so that later they are firmer and cook faster and better.

As for the plantain, once it was soft, I mashed it, added the chia and a bit of the water it was boiled in, and made the arepas the same way. And this is how they turned out! đŸ„°
