Hello friends of @hivefood, I hope you are all doing very well. Today I want to share this very versatile recipe with you: it can accompany breakfast, lunch, and even dinner. Plus, we can pair it with our protein of choice. In my case, I made them to freeze because, due to time constraints, I end up eating whatever other carbohydrate is available, and this will always be a better option—especially because of its high fiber content. So, let's get to work! Well, like most of my recipes, we need very few ingredients for this one. The first thing we are going to do is soak the chia seeds in a little bit of water—about five tablespoons! While the chia is soaking, we are going to boil the plantains. In this case, they are ripe, but not soft; they are very firm. 1003818318.jpg

Once the plantains are soft (after about 5 to 8 minutes), we are going to drain them and transfer them to a bowl, where we will mash them using a tool like the one you see here, or just a fork.

Once we have mashed the plantains, we are going to add the chia seeds. At this point, I realized that when I started kneading, everything was too watery, so I had to rely on my trusty old backup: I added two teaspoons of whole wheat flour I had left and a cup of regular flour. Obviously, it’s no longer a 100% healthy recipe, but it’s still a better option than a plate of pasta or rice to go with our proteins. So, let's keep making our tortillas by kneading until the dough stops sticking to our fingers.

Once our dough is ready, we will need a plastic bag and a little bit of oil to grease it. We will take small portions of the mixture and, using a rolling pin, flatten them until they are quite thin. Then, we will cook them in the skillet for about three to four minutes on each side. Naturally, since it's ripe plantain, we need to keep the heat low because it burns very quickly, but after three or four minutes on each side, our delicious tortillas will be ready.

And that’s how delicious they turned out! In my case, I'm going to freeze them so I can take out one or two as I need them, whether for breakfast, lunch, or dinner. You can serve them, as I mentioned at the beginning, with any protein, and believe me, you are going to love the taste. I hope you make them! ❤️
