It's another new and beautiful day on earth and we are grateful to be alive and much healthy to continue our daily endeavors. Today we would be continuing our weeding in the rice farms as well. Since we resumed back into the weeding yesterday, we are trying all we can to ensure that we clear of the farm in at least a week or thereabout so that we can finally relax from entering the swamp daily. The next times we would be working in rice farms, we would be coming for harvest only.

Yesterday I decided to assist my local community friends with the preservation of their own harvested 🌶️ 🌶️ 🌶️ 🌶️ 🌶️ peppers. Having realized that not many people are familiar with with the local method I have just introduced which is really fast and efficient. They have harvested their own pepper and poured it out to dry but due to the ceaseless rains, a good portion of the peppers were already getting rotten. Let it not be heard that it was at the stage of preservation that a farmer is now experiencing losses and not even when the crops were in the farm.

My family didn't grow peppers this year I feel so left out but there is not much I can do we have very few hands working in the farm right now. My two teenager siblings are busy with school and we can't get them out of school to join us. I have grown only a little of some rice, potatoes, corn, groundnuts and a few others that are much easier. But since peppers are in season and cheap, I took the advantage of saving some for my family.

There are various pepper preservation methods. The first if it's kind is if we want to blend and save them up in containers in the refrigerator. But for this method one has to be conscious of power supply. It can only be done in areas with enough power to keep the containers freezed so that the peppers do not get spoilt.

So far this parboiling before drying methods is yet the best for our local community and yesterday I decided to assist another person and show them how this is done.

Peppers can be sundried directly but that can be done only when the periods of these heavy downpours are over besides there different kinds of peppers are preserved with that method but for this scotch bonnet that contains a lot of moisture content such direct drying methods are not advisable.

The perboiling often removes moisture excess moisture content from the pepper and more important it kills worms and organisms that can otherwise cause the peppers to rot. It's not healthy to purchase peppers for food and be fighting with worms all around it hence this preservation methods healthier and more convinient for the local community to adopt.

And when drying peppers it can be done on very clean surfaces so that we don't pick up dirts that gets cooked along our meals whenever we are ready to cook.

Once the peppers are friend, they can also be blended into powdered form and saved up. The powdered one is even much more easier to saved up in the house to save space.
