Hello, lovely people of Hive, how was your day? Things have been pretty busy around here, but it’s been great because I was able to get a lot of little things done. Today I want to share a simple but very special dish, since it was prepared to please a little guest we had at home on Sunday. It’s little Luis Santiago, the son of a friend from church, who wanted to come over to my house that day after the service—and of course, I was more than happy to have him.
It turns out that Luis Santiago is a bit of a picky eater, so I had to come up with an alternative—something he might like. After checking with his mom, I ended up making this delicious chicken and carrot stew, which, luckily, he loved—except for the carrots, but I added those for the rest of the guests.
For this dish, I had to take several things into account, including the fact that Luis Santiago doesn’t like vegetables (onions, chili peppers, tomatoes, bell peppers, etc.), so I decided to use only onions cut into strips and a few spices; in fact, I used only curry and a little pepper, since the little guy loves spicy food, and thank goodness, the choice of spices was spot-on—so much so that by dinnertime (yes, the visit was a long one 🤣) he wanted to eat the same thing again, but we couldn’t because we’d polished off the entire chicken stew at lunch.
And the thing is, even though we used super simple ingredients, we ended up with an incredibly delicious chicken dish thanks to the slow cooking. But without further ado, let’s get to the recipe.

Procedimiento / Procedure
This Chicken and Carrot Stew is quite easy to make. The first step is to season the chicken pieces, which have been washed and cut into small pieces. Place the chicken in a bowl along with the curry powder, pepper, salt, and all-purpose flour. Mix everything together thoroughly to ensure that each piece of chicken is coated with flour.
Next, we’ll sear our chicken pieces. To do this, we’ll add oil to a deep skillet, heat it up, and once it’s hot, add the chicken in batches and brown it. We do this in batches so the chicken turns golden brown; if we put it all in at once, it will boil instead of browning.
We remove the first pieces that are ready, set them aside, and finish browning the chicken. At this point, the wheat flour we used at the beginning will start to form a thick layer at the bottom of the pan, and that’s exactly what we’re aiming for.
Once all the chicken pieces are browned, return them to the skillet, add the onion cut into strips, and mix thoroughly, using the liquid released by the onions to loosen the layer of wheat flour that has formed in the skillet.
Next, once the onion has caramelized, add the carrots, stir well, and pour in one cup of water. Cover, reduce the heat, and let it cook for 30 minutes, stirring occasionally.
After 30 minutes, our chicken is ready to serve and enjoy. We served it with white rice, and for Luis Santiago, I decided to mix the rice with the chicken and plenty of our delicious sauce in a deep bowl, leaving out the carrots—so there was more left for us 😋
The result? A super comforting chicken stew with a thick, silky sauce, packed with the flavor of the chicken and spices. It really is an absolutely delicious dish that, thankfully, was a hit with everyone who ate it that day.
