No-Bake Garri Cake and the Memories It Brings

Earlier today, I was scrolling through TikTok when I stumbled across a video from a popular chef asking what quick student meal her followers wanted her to try next. I was curious enough to check the comment section, and something caught my attention. Someone mentioned garri cake, a no-bake meal enjoyed by many secondary/high school students.

If you attended a boarding school, you would have tasted this meal or at least become familiar with its preparation. It was a staple across many schools at the time, and even though I am not sure if students still enjoy it as much, it will always be part of my core memories. So, I decided to prepare one.

INGREDIENTS:

  • Garri(Processed cassava)
  • 1tbs sugar
  • Magarine
  • Half cup of liquid milk
  • Powdered chocolate beverage

PROCESS

STEP 1: Pour two sachets of powdered chocolate beverage of your choice into a clean bowl. You want to start with this since it is a major ingredient for this meal.

STEP 2: In the same bowl, add one cup of raw garri (processed cassava). Remember, no garri, no garri cake.

STEP 3: Next, add one teaspoon of sugar. I recommend this quantity to keep the sweetness balanced and not overpower the entire meal.

STEP 4: Then, pour in half a cup of liquid milk. This helps give the mixture a richer taste and prevents it from being too dry.

STEP 5: Now, add a spoon of butter to give it a creamy texture. This also helps bind the ingredients together so it can hold its shape like a cake.

STEP 6: Mix everything thoroughly with a spoon until it forms a consistent mixture. At this point, your mixture should look well combined and slightly firm.

STEP 7: Afterwards, transfer the mixture into a clean plate and spread it evenly to the edges.

This was what mine looked like after shaping it carefully with a small knife to give it a neat form.

STEP 8: Next, mix your chocolate in a separate plate and pour it over the surface of the garri mixture. You want this layer to be slightly thick so it sits well on top like icing. I made mine a bit lighter because I intended to refrigerate it.

STEP 9: Now, spread a little butter on top and your garri cake is ready. It looks delicious and requires no baking at all.

I cut mine into small slices to make it look more presentable, and it turned out really great.

You can see that even when pierced with a knife, it holds firmly like a cake.

I thoroughly enjoyed this because every bite made me feel so nostalgic. I wish I could go back to boarding school to eat this with my friends because those were some of my happiest moments, and I would relive them all over again if I could.

Note: You may not want to eat this too often because of the sugar content, but it makes for a great once-in-a-while treat. It is a simple way to give your taste buds something different.

Ohh, so garri is not in a flour form right? But it is ready to be eaten and you don't even need to even steam it? Interesting. Im curious if we have them in the Philippines. This cake looks interesting and I really want to try it. All we have to do is mix, mix, mix. 💃🌟✨🌼
