One of the greatest avatars of the current Cuban is in the kitchen, to the extent that we have managed to be creative in inventing or even creating a revolution of dishes from the few that we have and that makes us think every day about what we are going to cook. Today a new process is joining that, although it was known from the special period, was not so common since colonial times.

I'm talking about charcoal stoves and the fact is that this natural fuel (I don't know what other name to use it) has flooded all of our homes and its slow cooking time means that we start cooking early.

First comes the process of finding quality coal. I've had the opportunity to buy several types, including one created by a small business that they call industrial coal.

Like many Cubans, I also look for the best quality charcoal, the one made with what we call Aroma or Marabú, although sometimes I end up buying a lower quality one because the best one doesn't always appear, and I often mix it with others to make it last longer because the prices for buying charcoal, like the rest of the products, have skyrocketed due to economic crises, inflation and high demand.

There's also the ignition process; some people do it with plastic crates without knowing how dangerous the carbon monoxide they release is. I use burnt oil thanks to a neighbor who also uses the leftover oil from his old car.

After lighting the charcoal and starting to cook, the process of tending the coals begins to prevent them from going out or losing heat, so that the food doesn't finish cooking. Tending the coals means watching over them constantly to prevent them from going out and having to start the whole process again.

The cooking process is slow, so at home we devised a traditional Cuban stove with two cooking areas. We used the frames of two metal chairs, welding them together. Then we placed two inner pots from electric pressure cookers, known in Cuba as "ollas reina" (queen pots), inside, and lined them with a mesh to prevent the burning coals from falling to the bottom and to retain the heat and embers.

This is the current task of many Cubans and in my case, we have made at home as much as beans, mixed rice dishes such as congrí, moros y cristianos, amarillo, fish, among other foods.

As a side note, I should mention that while the food has never tasted smoky since we start cooking only after the charcoal is lit and ready, the same hasn't happened when we've boiled drinking water. I don't know what magic it is about water, but it always ends up with that smoky flavor, making it unpleasant to the palate. But I've already found another solution besides charcoal. The truth is, this task is a daily adventure, but one that seems endless.
