Me encantan las especias; los aceites aromáticos que ellas tienen mejoran cualquier preparación. La mayoría de las especias, al contener aceites aromáticos, hace que ese aroma que percibimos como sabor, no sea hidrosoluble. Eso quiere decir que a una bebida, por ejemplo, no basta con agregar canela en polvo para dar ese "sabor". Con esta receta, quiero mostrarte una de las técnicas que permite aprovechar todos esos aceites aromáticos y de esa forma lograr preparaciones con mejor sabor.
I love spices; their aromatic oils enhance any dish. Since most spices contain aromatic oils, the aroma we perceive as flavor isn’t water-soluble. That means that, for example, simply adding ground cinnamon to a drink isn’t enough to give it that “flavor.” With this recipe, I want to show you one of the techniques that lets you make the most of all those aromatic oils and, in that way, create dishes with better flavor.


La chía aporta muchísimo a una preparación. Esta semilla tiene muchos beneficios para la salud, adicional a que aporta textura húmeda y, al hornearse, tiene ese sabor a frutos secos tostados que va muy bien en diferentes recetas como de galletas, masas quebradas o bizcochos. Hay muchos postres que no son saludables, pero siempre se puede agregar un ingrediente que aporte fibra y nutrientes sin aportar muchos cambios.
Chia seeds add so much to a recipe. These seeds offer many health benefits, plus they add a moist texture, and when baked, they have that toasted nutty flavor that pairs well with various recipes, such as cookies, shortcrust pastry, or sponge cakes. There are many desserts that aren’t healthy, but you can always add an ingredient that provides fiber and nutrients without making many changes.

- Primer paso es moler las especias. Puedes ayudarte con un mortero. Puedes tamisar las semillas de hinojo y la pimienta guayabita, por si quedan trocitos más grandes.
- The first step is to grind the spices. You can use a mortar and pestle. You can sift the fennel seeds and guayabita pepper, just in case there are any larger pieces left.

- Colocar las especias molidas en una sartén y llevar a fuego. Una vez comience a calentar la sartén, solo es calentar las especias un poco, evitando que se comiencen a tostar y quemar. Se apaga el fuego y en este punto, se agarra un poco de la mantequilla de la receta, unos 20-30 gr aproximadamente y se coloca junto con las especias para que se derrita y se mezcle todo. La mantequilla va a atrapar los aceites aromaticos. Dejar enfriar esta mezcla.
- Place the ground spices in a skillet and heat them over the stove. Once the skillet begins to heat up, just warm the spices slightly, being careful not to let them start to toast or burn. Turn off the heat. At this point, take a small amount of the butter from the recipe—about 20–30 grams—and add it to the spices so it melts and everything blends together. The butter will capture the aromatic oils. Let this mixture cool.

- En un bol, agrega la mantequilla y suaviza un poco. Agrega la mezcla de especias atrerior e integra a la mantequilla.
- In a bowl, add the butter and let it soften slightly. Add the spice mixture from earlier and mix it into the butter.

- Agrega la mitad del azúcar e integra a la mantequilla. Separa las yemas de las claras y reserva las claras. Agrega las yemas de 1 en 1 hasta que esten bien integradas. Agrega la chía hidratada previamente con parte de la leche de la receta. Yo utilice agua ya que preparo la leche con leche en polvo, asi que dividí el agua base.
- Add half the sugar and mix it into the butter. Separate the egg yolks from the whites and set the whites aside. Add the yolks one at a time until they are well incorporated. Add the chia seeds, which have been soaked in some of the milk called for in the recipe. I used water because I make my milk from powdered milk, so I divided the base water accordingly.

- Alterna la harina, ya mezclada con el polvo de hornear, junto con la leche hasta que esté todo bien integrado. Monta las claras (merengue francés) con la mitad del azúcar restante y un poco de esencia de vainilla. Los frutos confitados debes ponerlos a macerar con el ron y agua de azahar unos 30 minutos antes. Luego los escurres, agregas un poco de harina a los frutos e incorporas a la mezcla de ponqué. Si quieres un ponqué cargado de frutos confitados, triplica la cantidad.
- Alternately add the flour (already mixed with the baking powder) and the milk until everything is well combined. Beat the egg whites (French meringue) with half of the remaining sugar and a little vanilla extract. You should let the candied fruit macerate in the rum and orange blossom water for about 30 minutes beforehand. Then drain the fruit, add a little flour to it, and fold it into the cake batter. If you want a cake packed with candied fruit, triple the amount.

- En un molde de 22cm de largo por 10cm de ancho, coloca papel de horno en el fondo y engrasa el molde. Agrega la mezcla y lleva a horno, precalentado a 350 °F, por el espacio de 40-45min. Una vez listo, deja reposar 10 minutos en el molde, luego desmolda el ponqué y deja enfriar antes de cortar.
- Line the bottom of a 22-cm-long by 10-cm-wide pan with parchment paper and grease the pan. Pour in the batter and bake in an oven preheated to 350 °F for 40–45 minutes. Once done, let it rest in the pan for 10 minutes, then remove the cake from the pan and let it cool before slicing.
