Saludos, amigos amantes del rico y variado sazón. 💁☀️

Enjoying an exquisite meal of rice with pork luncheon meat, boiled sweet potato, and a healthy spinach salad.
Greetings, friends who enjoy a rich and varied cuisine. 💁☀️
Happy day to everyone!
A new sausage shop recently opened near my home, and today I decided to visit it to explore its products. The pork luncheon meat caught my attention, so I bought a pound to prepare today's lunch.
I used it to make rice with pork luncheon meat, accompanied by boiled sweet potato and a fresh spinach salad. A simple combination that delighted my palate.
I invite you to discover the recipes for this menu. Let's begin!
✨General ingredients for 1 serving
- Pork luncheon meat: ½ pound
- Rice: 1 cup
- Sweet potatoes: 2 small ones
- Spinach: 2 sprigs with their leaves
- Mixed seasonings: 2 scallions with their leaves, ¼ tablespoon ground cumin, and 5 garlic cloves
- Tomato paste: 1 heaping tablespoon
- Olive oil: 3 tablespoons
- Vinegar: 3 tablespoons
- Salt: ¾ tablespoon, divided among the preparations
- Sugar: ¼ tablespoon
- Water: enough for washing, preparing, and cooking the ingredients
✨Preparation method
I began by preparing the rice with pork luncheon meat. I cut the luncheon meat into small cubes and rinsed the rice thoroughly with plenty of water, setting it aside. Then I cleaned and washed the scallions, chopped them finely, peeled three garlic cloves, and sliced them. I also measured out the ground cumin.
In the rice cooker, I added the scallions, sliced garlic, one tablespoon of olive oil, and one heaping tablespoon of tomato paste. I sautéed everything until a light sofrito formed, then added the luncheon meat and continued sautéing. Next, I added the rinsed rice and sautéed it for one minute so it could absorb the sofrito.
I then added one cup of water, the ground cumin, ¼ tablespoon of salt, and one tablespoon of vinegar. I stirred everything well, covered the rice cooker, and let it cook for five minutes.
This rice with pork luncheon meat turned out delicious!
The second item I prepared was boiled sweet potato. I washed the two small sweet potatoes, peeled them, and cut them into medium-sized pieces. I placed them in a pot with enough water to cover them, added ¼ tablespoon of salt and ¼ tablespoon of sugar, since I enjoy the contrast provided by that slight sweetness. I let them boil for ten minutes and then cut the pieces into thinner slices. Finally, I coated them with one tablespoon of olive oil. Exquisite!
While the sweet potatoes were cooking, I prepared the third component of the menu: a fresh spinach salad. I separated the leaves from the stems, washed them carefully, and chopped them. I added two tablespoons of vinegar, one tablespoon of olive oil, and a pinch of salt. I mixed everything well and chilled the salad for twenty minutes before eating.
Once all the preparations were ready, I served the meal and enjoyed adding my own decorative touches.
Friends, it was well worth visiting the new sausage shop, because today's purchase delighted my palate! I hope you enjoyed this menu too and feel inspired to incorporate new ingredients and dishes into your daily meals.
Wishing you positive vibes and a week full of varied flavors. See you soon!💁🌈
