A Cuban Culinary Treat During Culture Week: Egg with Carrots, Congrí, and Fried Sweet Potatoes

Greetings, friends who enjoy good food and a variety of flavors. 💁☀️

Happy weekend, everyone!

This Saturday, Bayamo is filled with joy as it celebrates Culture Week, a time when delicious traditional Cuban dishes are also enjoyed. Inspired by this festive atmosphere, and before joining the celebrations, I wanted to prepare a tasty lunch at home consisting of a seasoned egg and carrot omelet, fried sweet potato slices, congrí, and a small industrial chocolate pastry for dessert.

A delicious combination, and I’d love to share the recipes that make up this menu with you. Let’s get started!

✨General ingredients for the menu for 1 person

1000034748.jpg

  • Fresh chicken egg: 1.
  • Canned carrots: ⅓ of a 411 g can.
  • Small sweet potatoes: 2.
  • Rice: 1 cup.
  • Black beans: ½ cup.
  • Olive oil: 1 cup and 4 tablespoons.
  • Garlic: 5 cloves.
  • Whole cumin seeds: ¼ tablespoon.
  • Salt: ½ tablespoon, divided among the preparations.
  • Water: enough for preparing and cooking the ingredients.
  • Industrial chocolate pastry: 1 for dessert.

✨Preparation method

✨Steps for making the egg with carrots

1000034750.jpg

To begin the menu, I started by preparing the egg with carrots. First, I washed the can of carrots, opened it with a can opener, took out one-third of its contents, and set them aside, since the carrots were already cooked and sliced into little rounds.

Next, I peeled two garlic cloves, crushed them, and cracked a fresh chicken egg into a plate with the garlic. I beat the mixture with a fork, added a pinch of salt, and mixed in the reserved carrots.

Meanwhile, I heated two tablespoons of olive oil in a frying pan. Once it was hot, I poured in the mixture, spread it across the bottom, and let it brown. Then I turned it over and waited about another minute, until it developed an appetizing golden color.

Although it broke apart a little during cooking, it turned out very tasty and was ready to eat.

✨Steps for making the fried sweet potatoes

Next, I washed two small sweet potatoes thoroughly, removed their skins with a knife, and cut them into thin slices.

I heated one cup of olive oil in a frying pan and added the sweet potato slices. I let them fry until they were golden on both sides. After removing them, I sprinkled them with a little salt, as I like that small touch.

These sweet, crispy sweet potato slices turned out so tasty!

✨Steps for making the congrí

The third part of the menu was the congrí, which took less time to prepare because the variety of black beans I used softens easily.

First, I measured half a cup of black beans, checked them for any foreign particles, and rinsed them thoroughly. Then I placed them in a pot with one and a half cups of water and one tablespoon of olive oil. I let them cook for 25 minutes, until they were tender and some of the water had been absorbed.

Meanwhile, I measured one cup of rice, checked it, and rinsed it. I also peeled and crushed the remaining three garlic cloves.

In the rice cooker, I heated one tablespoon of olive oil and sautéed the crushed garlic. After a few seconds, I added the beans with their cooking liquid, which had reduced to approximately one cup, the same amount I had measured for the rice.

I added one-third of a tablespoon of salt and one-quarter of a tablespoon of whole cumin seeds. I let it boil for one minute and, once that time had passed, added the rinsed rice. I stirred it well, covered the rice cooker, and let it cook for five minutes.

This rice and beans turned out delicious! It paired perfectly with the egg and carrots and the fried sweet potato slices.

For dessert, I enjoyed a small heart-shaped industrial pastry, coated in chocolate and with a soft texture. A little treat that made my taste buds smile!

I loved this menu, which added flavor to this celebratory Saturday. I hope you enjoyed it, friends, and that it inspires you to discover the joy of cooking.

Positive vibes to everyone!💁🎉
