Saying Goodbye to the Week with a Surprising Bean Stew with Pumpkin and Plantain, Served with White Rice.

Greetings, friends who love delicious and varied home cooking. 💁☀️

Happy day to everyone!

I have always enjoyed including beans in my meals, both for their nutritional benefits and their delicious taste. That is why it was such a pleasant surprise when my brother visited and gave me some little beans he calls Vietnamese beans. I had never tried them before, and their small size and greenish color caught my attention. So I took the opportunity to get cooking and prepare a tasty lunch to wrap up the week.

I invite you to discover the recipe for this homemade menu, featuring bean stew with pumpkin and plantain, served with white rice.

Let’s get started!

General ingredients for a menu serving 3

1000036461.jpg

  • 2 cups of rice
  • 1 cup of beans
  • ½ pound of pumpkin
  • 1 plantain
  • 4 tablespoons of olive oil
  • 1 tablespoon of vinegar
  • Mixed spices: 2 scallions with their green tops, 5 garlic cloves, ¼ tablespoon of ground cumin, and ⅓ tablespoon of turmeric
  • 7/12 tablespoon of salt, divided between the preparations
  • ⅓ tablespoon of sugar
  • Enough water to wash and cook the ingredients

✨Preparation

The first thing I prepared was the bean stew. I measured out one cup of beans, checked them to remove any particles, and rinsed them thoroughly. Then I washed a piece of pumpkin weighing about half a pound, removed the seeds, and cut it into small pieces, leaving the skin on. I also washed a plantain, peeled it, and cut it into chunks.

I added the beans and vegetables to the pressure cooker with two cups of water, one tablespoon of olive oil, one tablespoon of vinegar, and one-third of a tablespoon of turmeric. I stirred everything, closed the cooker, and let it cook for 25 minutes. Once that time had passed, I set the stew aside while preparing the sofrito.

In a frying pan, I heated two tablespoons of olive oil and added two scallions, washed and chopped, along with three peeled and sliced garlic cloves. I sautéed everything for about one minute and added it to the stew. Then I added one-quarter tablespoon of ground cumin, one-quarter tablespoon of salt, and one-third of a tablespoon of sugar. I stirred to combine the flavors, closed the pressure cooker again, and let everything cook under pressure for another two minutes.

When I opened the cooker, I was greeted by the pleasant aroma of a thick, creamy stew with little pieces of pumpkin and plantain. I could not resist tasting it. Its delicious flavor reminded me of split-pea and lentil stew. What a treat!

To complement the bean stew, I prepared some white rice. I measured out two cups of rice, checked it, and rinsed it well. Then I placed it in the rice cooker with two cups of water, one tablespoon of olive oil, two peeled and sliced garlic cloves, and one-third of a tablespoon of salt. I stirred everything together and let it cook for six minutes.

When the cooking time was over, the rice was fluffy, with a pleasant olive oil and garlic flavor. I served it alongside the bean stew to complete this delicious homemade meal.

Friends, I loved trying these little beans for the first time and sharing this cooking experience with you. I hope you enjoy the recipe too and feel inspired to give them a try.

Wishing you positive vibes and a happy end to the week, filled with culinary delights. A big hug!💁🌈
