
Any porridge dish is always a warming dish, especially delicious on a rainy day like this. I'm not feeling well due to a cold, so porridge is definitely the perfect inspiration to enjoy while it's warm. This porridge was inspired by one of my friends, who recommended pumpkin porridge for my current situation. She said I needed porridge to warm me up. It was a bit funny, but since I had the ingredients, it couldn't hurt to try it.
Pumpkin Sticky Rice Porridge

Pumpkin Sticky Rice Porridge is one of the first porridges I made at home, using only glutinous rice and pumpkin. The pumpkin pieces, which make this dish even more delicious and soft, are cut into small pieces in this dish.
It doesn't require many ingredients, just glutinous rice, pumpkin pieces, and coconut milk. I think this will be the best combination I can prepare at home for me to enjoy.
Ingredients

50 grams pumpkin 70 grams glutinous rice 500 ml thick coconut milk 10 grams palm sugar 1 tablespoon granulated sugar ¼ teaspoon salt 2 pandan leaves
Procedure
Boil the glutinous rice in sufficient water, then wait until the rice expands and is half-cooked. Don't forget to add the pandan leaves to the boil.

Then, cut the pumpkin into cubes and add them to the boiled glutinous rice.

Next, add the palm sugar, granulated sugar, and salt, and cook until thickened.


Then add the thick coconut milk. The coconut milk I used was still frozen and slightly orange. But that's okay, then cook the porridge until cooked.

Results and Serving

Serve the porridge in a serving bowl while warm; it will thicken slightly once warm. The sticky rice, stirred in, does absorb some of the coconut milk, making it creamier. But that's not a problem; that's precisely the texture I prefer.

The sweet taste of palm sugar is enhanced by a savory touch of coconut milk, especially the fragrant aroma of cooked pandan leaves and the distinctive aroma of coconut milk. What I love most is the soft pumpkin, making this dish a perfect addition to any meal.
