The Vegan Community’s 5th Anniversary Cake

20261014_120848.jpg

It’s hard to believe how quickly time has flown—we’ve come a long way in this community, through both good times and bad. We’ve shared countless vegan recipes that we never would have imagined before, creating delightful dishes inspired by cuisines from around the world. We share these here to provide cooking inspiration for families.

Vegan food is rich in flavor; plant-based ingredients sourced from nature offer a way to create appealing dishes. I’ve always wanted to be part of this by creating new vegan recipes I come across. Last year, I made a vegan birthday cake by steaming it. This time, I’ll make a baked version using ingredients we’re sure to have on hand wherever we are.

I’d like to extend a special shout-out to the community and dedicate this simple birthday cake to them. Happy 5th birthday to the @plantpoweronhive community! May the community continue to thrive and grow even stronger in the future. I’m deeply grateful to this community—especially to @sirenahippie—who always helps make this special moment happen every year. Even though it’s a little late, I’m sure this will be an amazing celebration. I’d also like to thank all the sponsors of the community’s 5th-anniversary birthday cake challenge. Thank you for making space for this celebration. Honestly, I’ve been waiting a long time for this moment—I was initially skeptical that this celebration would even happen. But my perspective changed after I saw the latest post announcing the birthday cake-making competition. I invite all of you to participate in this 5th vegan birthday cake-making challenge. Vegan Challenge here, Everyone is invited!

Baked Carrot Cake

Carrot cake is a cake that’s quite easy to make, tastes delicious, and has a very moist texture. This is because the addition of soy milk and grated carrots makes the cake even softer and quite moist. What makes it special is its beautiful airy texture, achieved by adding a small amount of leavening agents—baking soda and baking powder.

The choice of ingredients plays a crucial role in vegan cakes since they contain no eggs at all. The liquid and dry ingredients must be weighed accurately to ensure the recipe turns out well and the result is enjoyable.

Ingredients

Liquid Ingredients

135 ml soy milk 100 grams granulated sugar 90 ml vegetable oil ½ teaspoon vanilla extract

Dry Ingredients

150 grams all-purpose flour ¾ teaspoon baking powder ¾ teaspoon baking soda a pinch of salt ¼ teaspoon ground cinnamon (optional)

Other ingredients

150 grams carrots Chocolate bar

Procedure

Grate the carrots using a cheese grater, or if you prefer a finer texture, use a finer grater.

Next, combine the soy milk, granulated sugar, vanilla extract, and salt, and stir until well blended.

Then add the dry ingredients—all-purpose flour, baking powder, and baking soda—all of which have been sifted beforehand.

Stir until well combined, then add the grated carrots and vegetable oil, and stir again until well combined.

Next, pour the batter into a round baking pan lined with parchment paper. Tap the pan gently to settle the batter, then top with dark chocolate chunks. Bake in the oven for about 55 minutes using top and bottom heat at 160 degrees Celsius.

Take a look at my birthday cake—it’s so beautiful, isn’t it? The aroma that wafts out of the oven is incredible—you can smell it all over the room. I love soft cakes like this; the texture is slightly moist, just like a steamed sponge cake. Maybe the milk and carrots make the texture lighter.

You know, using milk also makes it taste even better—the sweetness isn’t cloying at all. Plus, the dark chocolate—oh, it’s so delicious! The chocolate flavor really comes through when you take a bite of the cake. I’m so happy my cake turned out well, even though I was initially pessimistic about making it without eggs.

This cake is perfect to enjoy while it’s still warm with a cup of coffee. After taking it out of the oven, I decorated it, of course, since this cake is for a 5th vegan birthday celebration. I’d already bought the cake decorations yesterday while shopping at the baking supply store. And the result turned out really cute with flower-shaped carrot slices on top.
