Desserts made with papelón—also known as panela or piloncillo—are very common in Venezuela. There are all kinds of dishes made with this ingredient; you could say it’s part of the traditional flavors of Venezuelan Creole confectionery. What happens when you mix papelón with wheat flour and spices? You get debudeque, a kind of fairly dense cake, perfect for enjoying with hot drinks like coffee or a glass of milk.
Although this dish originated in Falcón state, it can be found throughout the country under different names and sometimes with different ingredients, though it always retains its essence. Spices are key to bringing out the flavors in this dessert, and their aromas would let everyone know when it was cooking on the stove. My mom used to make a version of this debudeque when I was a kid, and eating it always brings back fond memories.

Preparación || Preparation
- The first step is to prepare the brown sugar syrup. Place the panela in a pot and add water equal to half the weight of the panela. Place the pot over medium-low heat and let it melt completely. Turn off the heat and let the syrup cool until it is lukewarm. I recommend not using panela that is too dark.
- Once the molasses is warm, pour it into a bowl, add the melted butter, and mix well with the molasses. Add the eggs one at a time and mix well into the batter. Toast the spices in a skillet, grind them, and add them to the batter along with the vanilla, mixing well.
- Add the wheat flour along with the baking powder and baking soda, and mix well. The result is a fairly thick batter. Pour into a 30x20 rectangular pan and bake at 180 °C for 45–50 minutes. Keep an eye on it while baking so it doesn’t overbake and become too dry.
- Cut into rectangles or squares and brush with brown sugar syrup to add shine and extra sweetness.
The debudeque is ready. The flavor of the spices really enhances this dish without overshadowing the taste of the panela, which is the star here. Debudeque is a quintessential Venezuelan snack, especially for certain generations. Some versions are very dry so you can dip them in coffee or milk, but I prefer a middle ground so I can eat the debudeque on its own.
