Both in ancient times and today, there have been moments or seasons when fruits or vegetables have been scarce or very expensive. Whatever the circumstances, these conditions have led people to create new dishes, and that is how this “poor people’s fig jam” came to be. Its name says it all: it was born out of the desire to enjoy fig jam or a similar sweet treat, but the high cost or scarcity of figs led people to experiment with an inexpensive vegetable available year-round—the eggplant.
When combined with sugar, lemon, and spices, eggplant takes on a flavor reminiscent of fig jam. You could easily call it eggplant jam, but “fig jam” sounds better. The color is similar, as is the texture; the seeds give it the same texture as fig seeds, and adding fig leaves enhances the experience even further. It’s not a magical jam, but it works very well on toast, crackers, and so on.

Preparación || Preparation
- Wash the eggplants thoroughly, peel them, and cut them into small cubes. Soak them in water for about 10 minutes, then drain all the water.
- Weigh the sliced eggplant and add half its weight in sugar. Mix everything together and let it sit for 1 hour. After that time, add the juice of 1 lemon; I use 2 lemons for every kilogram of fruit, and add a cinnamon stick. If you can find fig leaves, add 1 or 2 leaves.
- Cook over low heat with the lid on for about 5 minutes; then remove the lid and continue cooking, stirring occasionally, until the eggplant is very tender. Puree the mixture without the cinnamon and fig leaves, then return it to the heat until it reaches the desired consistency—test it on a cold plate. Once ready, transfer it to a container.
Now that the jam is ready, all that’s left is to enjoy it to your heart’s content. Some people have told me that this jam is like eating eggplant with sugar and that it’s not really acceptable, but the truth is that there are so many vegetables used in jams that it’s best to let your palate experience new flavors and textures. And if you love figs, you’re going to enjoy this jam. If you don’t like the seeds, you can add them after the jam is processed.
