October 20 is celebrated worldwide as International Chef's Day. I like to think a little beyond that and include every cook—professional and amateur alike—who, in one way or another, cooks to delight the palate. “Chef” is a culinary title; that is, it’s a title within a kitchen that indicates who’s in charge. So, if there are 10 cooks and only one chef in a kitchen, then only one person would be congratulated, even though the effort comes from everyone.
Given what I mentioned in the previous paragraph, I want to congratulate everyone who uses their hands to cook and delight the palate. Of course, I’d like to give a special shout-out to those who have studied cooking professionally. Happy International Chef’s Day! And let me tell you, there’s no better way to celebrate than by helping students on their journey to becoming professional pastry chefs.
On October 20 of last year—I remember it coincided with another assessment as well—but this particular assessment was a bit more technical and had a specific theme. In other words, each group of students presented dishes from a different country, but this time they decided to choose a theme related to that country. For the United States, they chose Halloween; for Italy, they chose celebrations such as Carnival; and for Germany, they chose a tourist destination. In addition to presenting on the desserts, they also talked about the culture of those countries, and the presentation turned into an exchange of knowledge.
When it comes to desserts, there were really very few technical details to correct—other than using ingredients of a certain quality or, when portioning a cake, taking certain factors into account to ensure harmony with the plating. It often happens that in a class, specific brands of a product are recommended, but students end up using a different one, and the result changes in terms of flavor, texture, aroma, and even color.
I love it when that happens because it really helps you understand that, even if an ingredient seems to be the same and has the same composition, the manufacturing process matters a great deal and will have a significant impact on the final result. Some people called me crazy when I told them that, before using margarine, for example, I would buy 10 different brands and prepare the same recipe with each one to determine which one produced the best result.
I was delighted to be able to attend this evaluation and do my small part in training the next generation—especially given that this occasion reminds me that, even though I’m not a head chef, I strive every day to acquire the knowledge I need to challenge myself to be the best chef I can be.
