La maracuyá, también conocida como parchita en mi país, es una de mis frutas favoritas. La utilizo para preparar cremas, galletas, helado, bebidas, entre otras preparaciones de pastelería. Es un sabor que va muy bien en recetas dulces. Hablar de mermelada de maracuyá es hablar de una preparación que usa la pulpa, se agrega azúcar y queda como un gel. Hoy quiero mostrarte una técnica que aprovecha toda la fruta.
Passion fruit, also known as “parchita” in my country, is one of my favorite fruits. I use it to make creams, cookies, ice cream, drinks, and other baked goods. Its flavor pairs very well with sweet recipes. When we talk about passion fruit jam, we’re referring to a preparation that uses the pulp, adds sugar, and results in a gel-like consistency. Today I want to show you a technique that makes use of the entire fruit.
La parchita lo tiene todo. Es una fruta que no necesita de otras para lograr estructura. Comento esto porque es común que se agregue auyama u otras frutas o vegetales para dar cuerpo a la mermelada de parchita. Luego de hacer una investigación de los componentes de la maracuyá, descubrí que la parte blanca tiene alta cantidad de pectina. La pectina es esa fibra que se encarga de gelificar y, teniendo esta fibra en alta cantidad en lo blanco de la parchita, decidí utilizarla y amé el resultado.
The passion fruit has it all. It’s a fruit that doesn’t need anything else to achieve its texture. I mention this because it’s common to add pumpkin or other fruits or vegetables to thicken passion fruit jam. After researching the components of passion fruit, I discovered that the white part contains a high amount of pectin. Pectin is the fiber responsible for gelling, and since there’s so much of it in the white part of the passion fruit, I decided to use it—and I loved the result.
Esta mermelada tiene una textura increíble, un sabor intenso y un color que me encanta. No te dejo cantidades porque se sigue la regla de que, lo que pese la pulpa y la piel ya cocida y procesada, se agrega la mitad de ese peso en azúcar. This jam has an incredible texture, an intense flavor, and a color that I love. I’m not giving specific amounts because the rule is that you add half the weight of the cooked and processed pulp and peel in sugar. - Lo primero es lavar bien la fruta. Se corta a la mitad, se retira la pulpa y se reserva. Se raspa bien el interior de la fruta para retirar toda la membrana, ya que es amarga. Se pone a cocinar en agua ligeramente salada y una vez rompa hervor, se apaga, se retira el agua, se lavan los cascos de maracuyá y se vuelven a colocar en una olla con agua.
- First, wash the fruit thoroughly. Cut it in half, remove the pulp, and set it aside. Scrape the inside of the fruit thoroughly to remove all the membrane, as it is bitter. Place the fruit in lightly salted water to cook; once it comes to a boil, turn off the heat, drain the water, wash the passion fruit shells, and return them to a pot with water.
- En la segunda cocción se realiza hasta que los cascos de maracuyá estén muy suaves y puedas pinchar fácilmente con un tenedor. Los dejas enfriar un poco hasta que puedas manipular y, con ayuda de una cuchara, retiras lo blanco de la piel exterior amarilla y dura. Se lleva a licuar con la pulpa y semillas hasta que quede como un puré.
- For the second cooking, cook until the passion fruit shells are very soft and you can easily pierce them with a fork. Let them cool slightly until you can handle them, and, using a spoon, remove the white pith from the tough, yellow outer skin. Blend it with the pulp and seeds until it becomes a puree.
- Agrega la mezcla en una olla, pasada previamente por un colador para evitar cualquier grumo y pesada para saber la cantidad que tengo. Se agrega el azúcar y la cantidad es la mitad de lo que pesa la mezcla anterior. Se agrega la pizca de canela, el jugo de limón y se comienza a cocinar a fuego medio hasta que al mover la mermelada y ver el fondo de la olla, no se vuelva a unir. Se retira del fuego y se deja enfriar.
- Add the mixture to a pot, after straining it through a sieve to remove any lumps and weighing it to determine the amount. Add the sugar—the amount should be half the weight of the mixture. Add a pinch of cinnamon and the lemon juice, then begin cooking over medium heat until, when you stir the jam and look at the bottom of the pot, it no longer comes back together. Remove from the heat and let it cool.
Ya la mermelada está lista. Vas a notar que la mermelada espesa muy rápido gracias a la cantidad de pectina presente en la parchita. Me encanta utilizar esta mermelada para comer con pan, galletas saladas, rellenar bombones de chocolate, utilizar como base para cremas, etc. Es una mermelada consistente y con sabor increíble.
The jam is ready. You'll notice that the jam thickens very quickly thanks to the amount of pectin in the passion fruit. I love using this jam on bread, with crackers, as a filling for chocolate bonbons, as a base for creams, and so on. It's a thick jam with an incredible flavor.
