I enjoy making jams, and that has taken me down a pretty sweet path—one that has allowed me to discover a variety of incredible recipes. If I could organize this blog, I’d have a section dedicated to jams. I’ve made different versions of carrot jam, but I hadn’t tried this Persian jam before, and I’m putting it in my top 5 favorite jams.
This jam contains cardamom, which enhances the citrus flavors and is the star spice here. It also has rose water, which adds that magical touch that really shines on the palate. For this version, I added a little dried tangerine peel, which, together with the other ingredients, creates a balance of flavors that I love. It’s a slow-cooked jam, but it’s well worth the time it takes to make.

- First, wash and peel the carrots. I grate them using the fine side, but you can also use the coarse side. Place the carrots in a stainless-steel pot and add enough water to cover them. Add the cardamom seeds and the mandarin peel, then cook over low heat with the lid on. Cook until the water has almost completely reduced.
- Add the sugar, lemon juice, and rose water. Stir everything together and continue cooking over low heat, stirring occasionally until it reaches the right consistency. You can cool a plate, scoop up a little jam, and place it on the plate; if you wait a few seconds and a groove forms that doesn't close up, it's ready.
Now that the jam is ready, all that’s left is to enjoy it. You can remove the cardamom seeds before bottling it; I prefer to leave them in so they continue to add flavor. This jam is perfect for spreading on buttered toast, but that’s really up to personal preference.
