Hace varios días, estaba compartiendo con ustedes una miniserie de recetas con mango. Tenía en mente que había compartido las 4 recetas y recién me di cuenta de que había dejado una receta pendiente de postear. Yo había escrito las 4 recetas y había dejado todo preparado, nada más de postear, pero honestamente no recuerdo por qué se me pasó publicarla. Dejando eso de lado, hoy cierro esta miniserie de recetas con mango al compartir contigo un pan a base de jalea de mango.
A few days ago, I was sharing a mini-series of mango recipes with you. I thought I’d already shared all four recipes, but I just realized I’d forgotten to post one. I had written all four recipes and had everything ready to go—all that was left was to post them—but honestly, I don’t remember why I forgot to publish it. That aside, today I’m wrapping up this mini-series of mango recipes by sharing with you a bread made with mango jam.
Durante la temporada de mangos, es común preparar jalea para aprovechar la abundancia de esta fruta. Yo particularmente suelo preparar la jalea sin azúcar añadida, para endulzarla un poco solo al momento de comerla y también porque suelo agregar mangos maduros para que aporten ese dulzor natural. Hace un tiempo compartí la receta de un pan a base de puré de zanahorias y utilicé esa misma receta, pero cambié el puré de zanahorias por jalea de mango sin azúcar.
During mango season, it’s common to make jam to take advantage of the abundance of this fruit. I personally tend to make the jelly without added sugar—partly to sweeten it just a little right before eating it, and partly because I usually add ripe mangoes to provide that natural sweetness. A while back, I shared a recipe for a carrot puree-based bread, and I used that same recipe but substituted the carrot puree with unsweetened mango jelly.
Utilicé todas las cantidades exactas de esa receta. El paso a paso es muy similar, solo que de inicio se mezcla el azúcar con la jalea de mango, para ayudar a que esa acidez contenga azúcar y ayude a la levadura. De resto, se siguen todos los pasos exactamente como en la receta del pan de zanahoria.
I used all the exact amounts from that recipe. The step-by-step process is very similar, except that you start by mixing the sugar with the mango jelly to help balance the acidity with sugar and aid the yeast. Otherwise, you follow all the steps exactly as in the carrot bread recipe.
Si has preparado la receta del pan de puré de zanahorias, vas a notar que la textura de la masa es más fina a diferencia de la masa con jalea de mango, ya que la jalea aporta mucha viscosidad. Una vez la masa esté lista, se divide en dos, se estira cada parte y se agrega adicionalmente un poco de jalea de mango dulce o cítrica, como si fuera un rol de canela. Se enrolla la masa y se entorcha.
If you've made the carrot puree bread recipe, you'll notice that the dough has a smoother texture than the dough with mango jam, since the jam adds a lot of viscosity. Once the dough is ready, divide it into two parts, roll out each part, and add a little sweet or citrus mango jelly, as if you were making a cinnamon roll. Roll up the dough and twist it.
Se coloca la masa en un molde savarín o, si prefieres, puedes colocar la masa sin relleno en un capacillo de panettone, que ese sería el método menos complicado. El pan se deja crecer hasta duplicar y se hornea unos 45-50 min a 180 °C. Yo adicionalmente le coloqué un crumble de cardamomo para aportar una textura crocante y un sabor a especia que combina muy bien con el mango.
Place the dough in a savarin mold, or, if you prefer, you can place the unfilled dough in a panettone mold—which would be the easiest method. Let the dough rise until it doubles in size, then bake for about 45–50 minutes at 180 °C. I also added a cardamom crumble to give it a crunchy texture and a spicy flavor that pairs very well with the mango.
El resultado es un pan muy suave, que recuerda mucho al panettone. Por eso doy la sugerencia de hornear en un capacillo y de esa forma no complicarle con entorchar el pan y rellenar, pero ese trabajo extra sí que lo vale. El pan adquiere un aroma y sabor frutal que me encanta. Adicional puedes colocar un glaseado de azúcar pulverizada y jalea. Hidratar masas con frutas permite aprovechar todos los nutrientes de las frutas, los aromas, sabores y colores. Este es un pan que sin duda estaré haciendo cada temporada de mango.
The result is a very soft bread that’s very reminiscent of panettone. That’s why I suggest baking it in a paper cup—that way, you don’t have to go through the trouble of shaping the dough and filling it—but that extra effort is definitely worth it. The bread takes on a fruity aroma and flavor that I love. Hydrating dough with fruit allows you to take advantage of all the fruit’s nutrients, aromas, flavors, and colors. This is a bread I’ll definitely be making every mango season.
